As a mom, family time is precious, and the last thing I want to do is spend any more time in the kitchen than I need to. Inspired by our friends over at Hallelujah Acres, I created a “salad box” that stays stocked in the fridge.
The concept is to always have fresh produce washed, cut up and ready to eat — all in a handy box. (In the case of my family… TWO boxes.) It is a salad bar ready to go with each meal. No more digging-around-the-drawers-to-see-what-we-have-that-hasn’t-gone-bad-because-I-forgot-about-it!
I just pull our boxes out, and that is it!
How to Make a Salad Box:
It is extremely easy and can be done pretty quickly and cheaply. Head to your nearest Dollar General, Target, Walmart, or anywhere that sells storage tubs in various sizes. I think I found mine at Dollar Tree.
You will need —
1-2 large tub/s with a secure lid (measure your fridge space and be sure to find one that will fit!)
4-6 smaller containers
I typically purchase a week’s worth of produce at a time. Just find the veggies, greens, herbs, seeds, nuts, water chestnuts or anything you’d normally put in a salad, stirfry, or sandwich wrap. Designate a few minutes one evening to wash and prepare all the items and put them in the smaller boxes (within the large salad box). With a few minutes of prep time once a week you’ll have everything ready to go for the entire week!
The salad box saves a lot of time and makes dinner prep a lot less stressful.
