I love sweets and my kids love sweets… so I pulled together a simple cake recipe that can be whipped up quickly. I love this combination of ingredients. I also love that I am getting avocado into my picky nine-year old.
I’ve used this for a date night at home with the husband, as a birthday cake, dessert for our family or as a gift for someone who needed a “cheer me up”.

Raw Chocolate Cake with Avocado Icing
3 cups walnuts
2/3 cup carob powder
1/4 tsp sea salt
1 cup Medjool dates (pitted)
Combine the walnuts, carob powder, and salt in a food processor (or Vitamix). Pulse until everything is coarsely mixed. Divide dough in half and shape into two cake layers. Set aside.
1/3 cup softened Medjool dates (pitted)
1/4 cup Raw honey
1 medium avocado
1 T coconut oil
1/3 cup carob powder
Combine dates and honey in food processor (or Vitamix) and mix until smooth. Add the avocado and continue to process. Add the carob and process until smooth. **I usually double this because I like a lot of icing. : )
Building the Cake:
To serve, frost the top of one of the cake layers with half of the frosting. Stack on the second layer and ice the top and sides. A fun addition to the cake is fresh fruit between the layers. We love fresh strawberries, raspberries and blueberries.
The cake can be made a week in advance and the icing is good (stored separately) for a couple of days. Assemble the cake and store in the fridge.
